- If using dry beans, cover with water (2-3 times the volume of beans) and let soak overnight. Drain, and cover with fresh water. Cook for one hour, or until al dente but still tender.
- Preheat oven to 325F. In a large ovenproof pot, cook bacon and onion on medium high heat until the onions are soft and the bacon is rendered. Add beans and remaining ingredients, stir to combine well. Lid and bake in the oven for about 2 1/2 hours until thick and saucy, stirring twice. Add addition liquid (reserved pineapple liquid) or more beer if it starts to look dry.
Note: This recipe can be done in a crock pot!
