Teriyaki Sauce
- Combine ingredients and place in a microwave-safe dish. Microwave with lid on medium high for 1 ½ minutes, until the sauce is reduced and thick. Set aside to cool.
Pineapple Salsa
- Grill the pineapple chunks on medium high heat for 2 minutes on each side, or until the pieces have distinct grill marks. Allow to cool, then cut the chunks into bite-sized pieces and place in a bowl. Add the onion, jalapeño, cilantro, lime juice, salt, and honey. Mix well and chill.
Smak Dab Mayo
- For a basic mayo, blend together egg, mustard, salt, and lemon juice in a food processor. With the motor running, very slowly drizzle in about a ¼ cup oil. Gradually add in the remaining oil in a slow and steady stream. The mayo should be thick and creamy. Season with salt and more lemon juice if needed.
Teriyaki Sliders
- In a bowl, gently mix the ground pork, green onion, soy sauce, garlic, onion, salt, pepper, egg and breadcrumbs. Using a 1/3 measuring cup, portion and shape into 8 patties. Press an indentation into each patty.
- Grill patties, covered, over medium high heat for 6-7 minutes on each side, quarter turning halfway. Meanwhile, lightly toast buns on the grill. Generously glaze the top of the patty with the teriyaki sauce and top with cheese during the last 1 minute of cooking time.
Assembly
Lay out your toasted buns and slather the tops with mayo and the bottoms with mustard. Place the patty on the bottom and add a spoonful of pineapple salsa. Place the bun top on and serve immediately.
