Cashew Ramen Noodle Salad

Ingredients

Salad

  • 1 16oz bag of coleslaw mix or shredded napa or savoy cabbage 
  • ¼ cup cashews, chopped
  • ¼ cup almonds, chopped
  • 4 green onions, chopped
  • 1 tbsp sesame seeds, optional 
  • 2 bags of packaged ramen noodles, crushed to small, bite-sized crumbs (discard the seasoning packets)

Dressing

  • ½ cup rice vinegar
  • 3 tbsp canola oil
  • 2 tsp sesame oil
  • 2 tbsp soya sauce
  • 2 tbsp melted honey or maple syrup 
  • 1 tbsp Smak Dab Hot Honey Jalapeño Mustard
  • 1 tsp garlic powder or 1 clove of garlic, finely minced or grated
  • ¼ tsp ground ginger or ½ tsp fresh ginger, finely minced or grated
  • Freshly ground black pepper 

Directions

  1. In a jar with a tight-fitting lid, add the vinegar, oil, soya sauce, honey, mustard, garlic powder, ginger and pepper. Shake well until combined.
  2. In a large bowl, add the cabbage, nuts, green onion, sesame seeds and ramen noodles. Pour in the dressing and toss well. Serve immediately.
