Crispy Baked Nacho Chicken


  • ¾-1 large bag Nacho Cheese Doritos Chips
  • 10-12 chicken legs or thighs 
  • 1 cup mayo
  • 2 tbsp Smak Dab Beer Chipotle or Hot Honey Jalapeño Mustard 
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp crushed red pepper flakes or chipotle powder
  • ¼ tsp dried oregano
  • 1 tsp paprika
  • 1½ tsp. cumin
  • ½ tsp kosher salt
  • ¼ tsp black pepper 

(Or omit all the spices above and just use a taco seasoning packet. But don’t forget to add the mustard!)


  1. Preheat oven to 400°F and line a baking sheet with parchment. 
  2. Carefully crush the Doritos in the bag until they are fine to small crumbs. (You could also use a food processor) Pour the chip crumbs into a 9x13” baking dish.
  3. In a medium bowl, add mayo, mustard, and remaining spices. Using one hand, roll each piece of chicken in the mayo mixture until coated and drop into the chip crumbs. Using the other hand, toss the chicken in the crumbs until evenly coated. Place on the baking sheet. 
  4. Bake the chicken for 30 minutes, then reduce the heat to 375°F and bake another 30-45 minutes- or until the chicken is no longer pink in the centre and the chips are golden brown and crispy.
