Crispy Prosciutto Goat Cheese Cups

Ingredients

  • 1/2 lb thinly sliced prosciutto
  • 2 oz goat cheese
    2-3 tbsp Smak Dab Cranberry Wine
  • fresh thyme, chopped
  • ½ tsp freshly ground black pepper
  • 2 tbsp pistachios (or walnuts), finely chopped
  • 1 tbsp dates, finely chopped
  • Good pinch of flaky sea salt

Directions

  1. Preheat oven to 425 degrees.
  2. Using one piece of prosciutto, fold it into the cup of the mini muffin pan to form a cup. Repeat for all 24 muffin cups.
  3. Cook in preheated oven for 10-15 minutes.  After 10 minutes, watch closely so that they do not burn.  Let cool completely.
  4. In a bowl mix up goats cheese, Smak Dab, salt + pepper, pistachios, and dates.
  5. Add goats cheese mixture into cup, top with fresh thyme and some extra cracked pepper.
  6. Serve and enjoy!
