Grilled Caesar Salad with Garlicky Artichoke Caesar Dressing
Ingredients
2 romaine hearts, cut in half lengthwise, washed and dried
2 tbsp capers, whole
Croutons or toasted panko breadcrumbs
Parmesan or pecorino Romano, grated or shaved
Freshly ground black pepper
Olive oil, for garnishing
Artichoke Caesar Dressing
1 12oz jar marinated artichokes
2 tbsp lemon juice
2 tsp red wine vinegar
1 tbsp Smak Dab White Wine Herb Mustard
1.5 tsp Worcestershire sauce
2 tsp hot sauce
2 cloves garlic
1 large egg yolk
1/4 cup olive oil
1/2 cup parmesan, finely grated
Kosher salt and freshly ground black pepper
Warm water, for thinning
Directions
In a large jar, add in artichokes (and liquid) lemon juice, mustard, Worcestershire, hot sauce, garlic, salt and pepper. Puree until smooth with an immersion blender.
Add a touch of water to thin, if needed. Add in egg yolk and slowly stream in oil until emulsified. Add in parmesan and blend again. Taste and season with salt, pepper and more vinegar- if needed.
Lightly grill your romaine (approx. 5-7 mins). Drizzle on dressing, & enjoy!
