Henrik’s Loaded Baked Potato Cups


  • 4 cups mashed potatoes
  • 6 slices bacon cooked and crumbled
  • ½ cup cheddar cheese shredded plus 2 tbsp more for tops
  • 1 cup sour cream
  • 1 tablespoon green onion
  • 1 tablespoon Smak Dab Canadian Maple Mustard
  • Kosher salt and freshly ground black pepper


  1. Preheat the oven to 350°F and line muffin pans with muffin papers.
  2. Combine potatoes, sour cream, cheese, bacon, green onion, mustard, salt and pepper in a bowl.
    Fill and press each tin with the potato mixture and top with remaining cheddar cheese.
  3. Bake for 30 minutes, or until golden brown.
  4. Cool slightly before serving.
