3 tbsp vinegar (red wine, white wine or apple cider)
2 tbsp Smak Dab Mustard (any flavour will do except Beer Chipotle)
2 cloves garlic, peeled, whole
Small handful of mixed fresh herbs (about ¼-1/3 cup- dill, parsley, basil, mint, or chives)
1 tsp honey
¾ cup extra virgin olive oil
½ tsp Kosher salt
Freshly ground black pepper, to taste
Directions
In a food processor, add the lemons and puree well until smooth. Add vinegar, mustard, garlic, herbs, honey, oil, salt and pepper. Puree until creamy and emulsified. Season with additional salt and pepper, if needed.
Use as salad dressing or a marinade for chicken and shrimp.
Chefs Tip: If using for a salad dressing, allow the dressing to come to room temperature slightly beforehand for a more pourable consistency.
