Poolside Cold Cut Sandwich

Ingredients

Sandwich

  • Baguette or bun of choice
  • Kewpie Mayo
  • Smak Dab Honey Horseradish
  • Charcuterie meats: mortadella, salami, ham, procuitto
  • Provolone cheese
  • Antipasto slaw

Antipasto Slaw

  • Iceburg lettuce
  • Red onion
  • Antipasto Spread - we used this one
  • Kewpie Mayo
  • Red Wine Vinegar

Directions

  1. Start by cutting your baguette, bread, or bun in half. If very doughy, take out some of the filling for more room to assemble the sandwich.
  2. Spead Kewpie mayo and Smak Dab Honey Horseradish on both sides of your bread. Place on your meats of choice and provolone cheese.
  3. In a bowl combine chopped iceburg lettuce, chopped red onion, antipasto spread, kewpie mayo, and a splash of red wine vinegar. The amount of antipasto, mayo, and vinegar needed depends on the amount of lettuce and onion. Don't over saturate the mixture
  4. Place slaw mixture onto your sandwich, wrap in parchment paper and enjoy by the pool, at the beach, or on a sunny summer day!
