Spicy Cashew Chicken Lettuce Wraps
Ingredients
1lb (16 oz.) ground chicken or ground turkey
2 tsp olive oil
5 large garlic cloves, minced
1” ginger, peeled and finely chopped
1/3 cup soy sauce
1/3 cup honey or maple syrup
2 tbsp Smak Dab Hot Honey Jalapeño Mustard
3 tsp rice vinegar
½ tsp sesame oil
3 tsp sriracha or garlic chili sauce
1/3 cup cashews, roughly chopped
1 bunch green onions, finely sliced
1 head green lettuce or butter lettuce, washed and dried
Sesame seeds, to garnish
Directions
In a large skillet over medium-high heat, add olive oil and cook ground chicken. Break up into bite sized pieces using a spatula. Cook until no longer pink and all the liquid has cooked off; about 7-10 minutes.
Meanwhile, in a small bowl combine garlic, ginger, soy sauce, honey, mustard, rice vinegar, sesame oil and sriracha. Pour mixture into the skillet and stir together on medium low heat for 3-4 minutes, until the sauce reduces to a consistency that coats the meat. Allow to cool slightly then fold in the chopped cashews.
Spoon chicken into the lettuce cups and garnish with sliced green onions and sesame seeds.
