Dill Pickle BBQ Chicken Skewers

Ingredients

  • 1 leftover jar of pickle juice
  • 4 boneless, skinless chicken breasts
  • 2 green peppers
  • 1 large red onion
  • 2 tbsp Smak Dab Spicy Deli Pickle mustard
  • 2 tbsp Smak Dab Golden Boy spice blend
  • Olive oil
  • Salt & pepper
  • Fresh herbs for garnish

Directions

  1. Soak wooden skewers in water for at least 30 minutes before grilling.
  2. Cut chicken, bell pepper, and onions into chunks. Set aside.
  3. Open pickle jar, add mustard and spice blend directly into the jar, stir to combine.
  4. Add chicken to the jar, making sure all pieces are submerged. Cover and refrigerate for at least 3 hours or up to 12 hours.
  5. Remove chicken pieces from pickle juice. Thread 1 chicken piece followed by 1 piece of pepper and 1 piece of onion, repeat. Continue threading remaining chicken and veg onto skewers as needed. Evenly brush skewers with oil.
  6. Heat your bbq and cook skewers until fully cooked -about 10-15 minutes of grilling time, depending on the size of the chicken pieces and the heat of the grill. Turn them halfway through cooking and ensure the chicken reaches an internal temperature of 165°F (74°C)
  7. Place onto a serving tray and sprinkle on more Golden Boy and fresh herbs before serving, enjoy!
